Homemade Mac & Cheese

If you don’t like macaroni and cheese I don’t think I can be your friend… jk but kind of being serious because this is my favvvvvvorite food of all time! This was probably the biggest thing I missed when I first went vegan, and no this won’t ever taste like kraft mac and cheese but it will still taste delicious πŸ™‚ I hope you get a chance to make this because its a real good one!

Ingredients
  • 1/3 cup raw sunflower seed (soaked for 30min- overnight)
  • 1 cup raw cashews (soaked for 30min- overnight)
  • 16oz pasta of your choice
  • 1/2 cup carrots
  • 4 cloves garlic
  • 3 cups vegetable broth
  • 1/4 cup cream cheese
  • 1/2 cup nutritional yeast
  • 2 tablespoon tomato paste
  • juice of 1/2 of a lemon
  • 4 tablespoon onion powder
  • salt/pepper to taste
  • 2 tablespoon olive oil
Directions
  • Step 1 Cook pasta and set aside
  • Step 2 sautΓ© garlic in the oil olive then pour into your blender
  • Step 3 add carrots and water to a pot cook until tender
  • Step 4 add all ingredients into your blender (except pasta)
  • Step 5 blend until very creamy not lumps or bumps in the sauce
  • Step 6 add more broth if it isn’t blending well
  • Step 7 now more sauce into a pot and cook down for 15-20min
  • Step 8 stir together the noodles and sauce
  • Step 9 Enjoy!
